Making these perfectly simple yet soft cookies feels like medidation. The recipe I have here uses vegan ingredients.

Ingredients
- 1/2 cup coconut oil, melted
- 1/2 organic coconut sugar
- 1/2 cup unsweetened almond milk
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking powder
Directions
- Pre heat oven to 350°F.
- In large bowl, mix coconut oil and coconut sugar until well mixed.
- Stir in almond milk and vanilla.
- Stir in flour and baking powder until dough forms.
- Drop dough by slightly rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
- Bake approximately 15 minutes or until edges are light brown and tops look set.
- Cool on a wire rack and keep in an airtight container once cold.
