Medidative Cookies

Making these perfectly simple yet soft cookies feels like medidation. The recipe I have here uses vegan ingredients.

Ingredients

  • 1/2 cup coconut oil, melted
  • 1/2 organic coconut sugar
  • 1/2 cup unsweetened almond milk
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

Directions

  1. Pre heat oven to 350°F.
  2. In large bowl, mix coconut oil and coconut sugar until well mixed.
  3. Stir in almond milk and vanilla.
  4. Stir in flour and baking powder until dough forms.
  5. Drop dough by slightly rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  6. Bake approximately 15 minutes or until edges are light brown and tops look set.
  7. Cool on a wire rack and keep in an airtight container once cold.
