All is Red Quinoa

Very tasty and light side dish that can also act as an entree from time to time.

Ingredients

QUINOA

  • 1 cup red quinoa
  • 2 cups of water
  • 1 red pepper
  • 1 tomato
  • 1 teaspoon red pepper paste
  • 1 teaspoon olive oil
  • 1 teaspoon ground cayenne pepper

TOPPING optional

  • 1 small lemon, juiced
  • 1/4 cup chopped fresh Italian parsley leaves

Directions

  1. Chop the tomato and the red pepper in to small cubes.
  2. In a pot, add all the quinoa ingredients and leave to boil.
  3. Get it to medium heat and cook for 5 more minutes, stir occasionaly.
  4. Once the quinoa absorbs all the water.
  5. Add the lemon juice and finish with parsley leaves. Serve warm or cold.
