All is Red Quinoa

Very tasty and light side dish that can also act as an entree from time to time.

Ingredients
QUINOA
- 1 cup red quinoa
- 2 cups of water
- 1 red pepper
- 1 tomato
- 1 teaspoon red pepper paste
- 1 teaspoon olive oil
- 1 teaspoon ground cayenne pepper
TOPPING optional
- 1 small lemon, juiced
- 1/4 cup chopped fresh Italian parsley leaves
Directions
- Chop the tomato and the red pepper in to small cubes.
- In a pot, add all the quinoa ingredients and leave to boil.
- Get it to medium heat and cook for 5 more minutes, stir occasionaly.
- Once the quinoa absorbs all the water.
- Add the lemon juice and finish with parsley leaves. Serve warm or cold.
